Since March 2013 the new Iberian Quality Standard, which is already approved and only need to publish in the Official State Bulletin. Difference the types of ham depending on the purity of the race, the way they have reared and food they received.

To make it easier to understand, show the types of ham such as will be written on the label of product.

JAMÓN IBÉRICO 100%, they are from animals with 100% pure Iberian breed genetics, whose parents have likewise 100% Iberian racial purity. And depending on the feed they can be:

de Bellota: If your main feed are acorns and grasses on the pastures.
de Cebo de Campo: if your feed also been on the pastures with grain, cereals, herbs and some acorns.
de Cebo: if your feed has been based on grain and cereals but not freely on the pastures, on farms.

JAMÓN _% RAZA IBÉRICA (percentage of Iberian race, the minimum is 50%), they are from animals with at least 50% of their genetic percentage corresponding to the Iberian pig race. And depending on the feed they can be:

The popular term "pata negra" only can appear on the label of the highest quality product, ie "100% Iberian Bellota."

The terms "Dehesa" and "Montanera" only can be used in the labeling of "Bellota" regardless of the purity of the race. Never in the "Cebo de Campo" or "Cebo".

It is forbidden use the terms "Recebo" and "Ibérico Puro" in product labeling.

In the labeling and advertising of products, only those that are designated as "de Bellota" may contain names, logos, images, symbols, or references related to the acorn or the pastures.

Consumer Tips.
1º. - Forget the denomination "Recebo". From now renamed to "Cebo de Campo".
2º. - So far the safest way to buy an 100% Iberian ham was one that was certified by any of Denominations of Origin (DOP) or Protected Geographical Areas (IGP) that exist in our country such as the Designation of Origin Dehesa Extremadura.

From now you can buy an 100% Iberian Ham with assurance without having to be certified by an DOP. But even if it is, then will take home the best Iberian ham.
