Iberians pigs, as the name suggests, only exist in our country, specifically in Extremadura where exist the most extensive oak woodland and pasture, also in parts of Huelva, Salamanca, Cordoba, etc.. This is a unique and different species, with morphological characteristics clearly differentiated, the result of animal adaptation to the environment and selection by man of the best pigs.

Among the most peculiar features of the Iberian pig are:

* The sharp mouth, adapted to eat herbs and acorns of the pasture.
* Long and thin legs to run around the pasture while looking for food.
* Short hair, as befits hot climates and the protection offered by your valuable fat.
* Thin body. Most suitable for an animal living in freedom.
* Fat infiltration in muscle mass, which gives it its unique flavor and texture.

As of October of each year, the Iberian pig comes into contact with the pasture for initiating the period graze in the pasture eating acorns and grass. The pasture and pigs (along with other animals) create a unique ecosystem. Jerez de los Caballeros has the largest expanses of pasture of Spain.

The acorn is the manna of the Iberian pig, from it depends on the flavor of their products and especially ham. An animal consumes between 6 and 10 kgs of acorns a day, supplementing with about 3 kgs of grasses that provide protein. This diet allows gain between 800 and 1000 grams per day for 3 - 4 months which is in the open range. After this period you get a pig from 160 - 180 kgs.

Why a Iberian ham from iberian pig raised in freedom in Extremadura?

Because it comes from Iberian pigs reared in Extremadura, in freedom (not on farms). This makes the ham is rich in unsaturated acids (beneficial) which determines that either a healthy product, since no colecterol level rises. The paw of this ham is elongated, stylized, profiling, keeps the hoof black color, the meat with a color between pink and red and purple, depending on their degree of maturation. Slightly salty flavor, delicate flavor.

The ham has a bright color because they feed freely, with fat infiltrations (characteristic of Iberian products) which determines their juiciness. It offers an aroma and flavor intense and persistent, because the prolonged period of maturation in warehouse.

You should not confuse the Iberian ham with other products that have nothing to do with the IBERICO:

- In the world of Iberico Ham the term "Patanegra" does not exist like brand, only is a common name used in Spain. There are other races of pigs are also black-footed but not is Iberico. (Hungarian pigs, Duroc-Jersey,...).

- The Serrano ham or White ham is not Iberico, is from white pigs in farm.

Why from Jerez de los Caballeros?

Jerez de los Caballeros is a municipality of 740.55 km2 and a lot of this area is forested, pasture and cork oak acorn that provide the main food of the Iberian pig.
